Dressings & vinaigrettes

Build brightness, balance and a clean finish.

Vinegar is the structural acid in a dressing: it lifts vegetables, controls richness and gives oil, herbs and seasonings a common direction.

01 · THE PRINCIPLE

Technique gives the ingredient its place.

Start with one part vinegar to three parts oil, then adjust for the ingredient, season and service. Apple brings round fruit; grape adds vinous depth; walnut offers a distinctive savoury edge; botanical vinegar adds aromatic complexity.

02 · THREE CONFIDENT MOVES

Make the method repeatable.

01

Emulsify

Whisk acid with salt and mustard first; stream in oil so the seasoning disperses evenly.

02

Match the leaf

Tender leaves need restraint; bitter greens and roasted vegetables can carry a firmer acidity.

03

Finish fresh

Dress close to service and keep a final teaspoon for tasting at the table.
